I created this recipe years ago, it turned out so well, I wrote it down. It was misplaced for 10 years but recently I found it and I thought I would share:
Ingredients:
Spring Mix Lettuce
1 Plum Tomato
1 Can Seasoned Black Beans (Low Sodium)
2 stalks Celery Hearts
1 Cubanelle Pepper
1 Slice Provolone Cheese
Purple Onion
1/2 Jar Sliced Mushrooms
1 small clove of Garlic
Extra Virgin Olive Oil
Paul Newman's Olive Oil and Vinegar Salad Dressing
Spices:
Tabasco
Frank Red Hot Sauce (also called Durkees Red Hot Sauce)
Ground Cumin
Red Pepper
Ground Thyme
Mrs. Dash Garlic & Herb Seasoning
Sea Salt
Black Pepper
1 Sprog of Fresh Rosemary
Directions:
Slice Plum tomato as desired, season with sea salt and pepper and set aside
Slice Provolone Cheese into strips and set aside
Dice Celery
Cut Cubanelle in half lengthwise, then slice pepper into long strips
1-2 Slices of Purple Onion sliced thin
Use a medium or large skillet, liberally add Extra Virgin Olive Oil
Heat on low to medium taking care not to burn Olive Oil
When hot add celery first
Pick of Rosemary sprigs and add to the pan
Season liberally with Mrs. Dash Garlic & Herb seasoning mix
Season with Pepper
Add Mushrooms
In a separate pot add the following:
1 Can of Black Beans
Tabasco
Franks Red Hot Sauce
Red Pepper (Just a little)
Ground Cumin
Ground Thyme
Fresh Cracked Black Pepper or Ground Black Pepper
Add clove of Garlic (just peel off the skin, don't crush or mince)
Cook Peppers, Celery, Onion and Mushrooms until tender in skillet
Place Spring Mix lettuce on a large plate
Add Hot Peppers, Celery, Onions and Mushrooms on top of the lettuce
Then add the desired amount of Black Beans, I use a slotted spoon
Add slices of Provolone cheese on top of Black Beans
Add tomatoes on the side
Use Paul Newman' dressing as desired
