Italian Vegetables


Italian Vegetables

Ingredients:

2 fresh zucchini
2 yellow squash
1 small brown onion
2 small red peppers
2 small orange peppers
2 small yellow peppers
3 sprigs of fresh rosemary
Garlic Powder
Ms. Dash Table Blend
Paprika Salt Pepper
Olivio or Butter

Directions:
Melt Olivio or Butter in skillet. Add chopped brown onion, cut up peppers, fresh rosemary sprigs. Season with garlic powder, Ms. Dash Table Blend, salt & pepper.
Cook until your vegetables become soft.


 

Add zucchini and squash. Season again lightly with all seasoning plus add paprika. Cook vegetables until desired tenderness.


 Serve immediately, these are best served hot.

Baked Flounder with Fresh Squash and Zucchini

Set oven to 350 degrees.
Place Flounder in baking pan after liberally sprinkling on the following:
Garlic Powder
Ms. Dash Table Blend
Pepper

Add to baking pan a little Olive Oil and some Olivio (butter substitute).
Place in oven and cook 15-20 minutes.

Dice a little yellow onion and place in bowl.
Cut up a little celery, small slices
Cut up fresh garlic or use garlic press.

In skillet add a little Olive Oil and begin with garlic. Add in some more Olive Oil and Olivio and then add onions and celery. Once that begins to cook, season with a little salt and pepper. Add in red pepper flakes as desired for spice.

Take zucchini and squash and cut length wise into strips.
Sprinkle Ms. Dash Table Blend and Pepper to veggies.
Place in skillet with onions, garlic and celery and cook over a medium high heat.

Take fish out of the oven, place on plate and squeeze fresh lemon on Flounder, add cooked vegetables as side.

Chicken Chili

Chicken Chili

This a great recipe for a different take on chicken. You can use this recipe for any cut of chicken without the skin and bone. I used boneless skinless chicken thighs when I created this dish but I have used chicken breasts with great success for this meal.

Boneless skinless chicken thighs
Garlic Powder
Salt
Pepper
Cumin
Paprika
Red Pepper (sprinkle lightly)

Sprinkle all ingredients on one side of chicken thighs.

In skillet, add olive oil and Olivio (butter substitute)

Place seasoned chicken thighs (seasoned side down) in skillet and brown lightly.

Sprinkle all ingredients on the other side of the chicken thighs.

Turn over to brown on the other side.

Take thighs out of skillet and place in roasting pan and finish off in 350 degree oven for 15 - 20 minutes or until done.

You can also do these on the grill without the Olivio with great success.
